
After a fairly rough term (although I managed to pass everything Hallelujah!) I’m back in Ottawa enjoying a wonderful holiday break.
Some of the things I’ve been up to:
Going for long snowy walks. Although alas, no snow people as of yet.
Baking Christmas cookies. Here’s my grandmother’s recipe for chocolate short bread, which is always a big hit.
2 cups flour
1/2 cup cocoa
1/2 cup cocoa
1/4 tsp baking soda
1/4 tsp salt
1 cup unsalted softened butter
1 cup sifted icing sugar
1 and 1/4 tsp vanilla
Sift flour, cocoa, soda and salt.
Cream butter, add sugar, beat 2 minutes.
Add vanilla.
Add flour mixture in two batches. Might have to use fingers to get it to the right consistency.
Place waxed paper in cookie sheet.
Place dough on top more waxed paper.
Roll to 1/3 “
Chill about 2 hours.
Cut with floured cutter.
Bake at 325 for 15 minutes or until set.
Reading some non-school related books. (FINALLY)
But practicing a few of my clinical skills.
And cuddling all the people and animals I love.
